I dedicate this recipe to all of the children and adults (my sisters and I included) who had a lot of fun making ‘mud pies’ in the backyard.
2 generous tablespoons of chia seeds
½ teaspoon maca powder
2 teaspoons cacao powder
½ teaspoon vanilla powder
½ teaspoon cinnamon
1 cup unsweetened almond milk
Sweetener to taste (optional)
Pomegranate seeds, to serve
1 tablespoon shredded coconut, to serve
6 crushed walnuts, to serve
1 heaped teaspoon cacao powder
1 teaspoon melted coconut oil
Combine the chia seeds, maca, cacao, vanilla and cinnamon into a jar. Add the almond milk and stir well, until combined. Add the sweetener if using, stirring again to combine. Cover and put in the fridge for at least 30 minutes, until the pudding is thick or overnight.
To make the chocolate paint, place the cacao powder and coconut oil in a small bowl. Stir until combined. Drizzle over the thickened, chilled pudding. Scatter the pomegranate seeds, shredded coconut and walnuts. Serves 1.
