These cookies will save your life. Because they are easy, delicious and so satisfying for anyone- at anytime. Be it a lunchbox snack, a munchie in the car ride after school and of course a great snack for the work office meeting. I love enjoying a few of these as a breakfast- on- the- run. The oats make them perfectly filling and satisfying while the banana naturally sweetens these cookies oh-so-deliciously. The riper the banana, the sweeter the cookie.
They honestly take 5 minutes or even less to mix up. A great recipe to get the children to help out with.
1/2 cup gluten free oats
1/2 cup walnuts, roughly chopped
1/4 cup desiccated coconut
1 small ripe banana, mashed
5 tablespoons melted coconut oil
1 tablespoon chia seeds
1 tablespoon rice malt syrup (optional)
1 teaspoon cinnamon
1 teaspoon maca powder (optional)
Slices of banana, to decorate
Preheat the oven to 160 degrees celsius. Then simply place all the dry ingredients into a bowl and combine. Add the wet ingredients and use your hands or a spoon to evenly combine. Form a tablespoon of the mixture into a disc shape and place on a baking tray, lined with baking paper. I like to decorate each cookie with a piece of banana. Bake the cookies for 15 minutes. Cool the cookies on the tray. Makes approximately 10 cookies.
