I’ve made it a little 2015 ‘thing’ to try new foods, that I wouldn’t normally think to eat and cook with. At the market last week my partner and I thought we would try this delicious looking fresh pink flesh dragon fruit. We have tried the white flesh variety, but not the pink. And I am so glad we did because it is delicious.
You might have tried dragon fruit when in South East Asia, but if you haven’t or have no idea what this gorgeous fruit looks like, Dragon Fruit is an extremely beautiful pink/ dark pink fruit covered in scales. The center of the fruit is made up of a deep pink or white and inside it has soft flesh (either pink or white) speckled with tiny black seeds. In my opinion it isn’t a sweet fruit, however the pink variety is a little sweeter.

Pink Dragon Fruit, Banana, Coconut Smoothie
250ml unsweetened almond milk
1/2 cup pink dragon fruit
1/2 – 1 small banana, preferably frozen
3 tablespoons coconut cream
2 tablespoons organic, unsweetened protein powder **
1 tablespoon chia seeds
1 teaspoon bee pollen
1 teaspoon lacuma powder (optional)
1 teaspoon sweetener (optional)
Place all ingredients into a blender and blend until smooth and creamy. Pour into a glass, top with extra bee pollen and enjoy!
// For children I recommend holding off on protein powder, unless you consult a GP. Replace the protein powder with extra chia seeds + 1 tablespoon nut butter.
// Want to mix it up? This smoothie would also make gorgeous icy poles. To make simply pop the smoothie into icy pole moulds and freeze. So so delicious.
