This chia pudding is simple, delicious and a fast breakfast option for anyone: busy school children or busy adults. I love it because it is so easy to mix it up- add different combinations of fruit- top with toasted muesli- top with a nut butter or crushed nuts.
It is becoming one of my favourite breakfasts at the moment because it is so refreshing and easy. Great for anyone experiencing some warm summer weather!! This is also a great recipe for children to help make. Enjoy!
3 tablespoons chia seeds
1 cup coconut milk **
1/2 teaspoon vanilla powder (optional but delicious)
Fresh fruit, to serve
Simply combine the chia seeds, coconut milk and vanilla powder into a jar. Stir well. Refrigerate for an hour or a little longer, or overnight (recommended). In the morning top with fresh fruit or your choice of toppings.
** Depending on the consistency of your coconut milk you might need to add a little more liquid or a few tablespoons of a yoghurt to your pudding to thin it down to the consistency you like.
