These bliss balls are to die for. If you prefer eating Anzac cookies check out my recipe here. But for that gorgeous caramel, buttery taste these bliss balls still deliver. They are so easy, gluten free and just plain yum.
Hint: These make a superb but free snack for the kids lunch boxes and they also make a great base for raw cheesecakes.
1/2 cup raw buckwheat (rinsed well)
1/2 cup desiccated coconut
1/8 cup rice malt syrup
1/8 cup coconut oil
2 tablespoons coconut sugar
1 teaspoon vanilla powder/ essence
Combine all of the ingredients into a food processor. Blitz for around 3 minutes of the highest speed to ensure that the buckwheat is crushed and fine. When done roll a tablespoon of the mixture into a ball. Store in the fridge for up to 1 week. Makes 20 balls.
