This salad is divinely easy, fast and uses a fabulous cheat option (the good quality store bought pesto). For those people who want to make their own pesto though, please do. But if you’re after something quick a store bought pesto (check the ingredients for a good quality one with few ingredients) works a fast, delicious treat!
1 cup cooked quinoa
1 jar of store bought pesto
1 can of mixed beans/ chickpeas, drained and rinsed
1 large zucchini, diced
1 punnet cheery tomatoes, halved
1/2 cup edamame beans
1 onion, diced
2 large cloves of garlic, minced
Heat a large frying pan over high heat with a tablespoon of extra virgin olive oil or coconut oil. Add the onion and the garlic and saute until soft (a few minutes). Add the diced zucchini and cook until tender and lightly golden. Add the quinoa, pesto, edamame beans and the rinsed beans. Stir to combine. Remove from the heat and add the cherry tomatoes, stirring well again to combine. Season with salt and pepper. Serves 4 people.
