I love chocolate and I’m not sure I know anyone who doesn’t! I had this delicious mousse cake the other week at a great vegan cafe near my house and knew I would be craving this little baby again. Great inspiration to get into the kitchen!
And has inspiration lead to the most delicious dessert for you all!
I hope you enjoy this (actually I KNOW you will!). The recipe is really easy but it does help to have a high powered blender. Don’t worry if you haven’t got one though- any blender will be fine but the mousse just wont be as smooth and silky (same goes if using a food processor). You will still get the same yummy taste (that’s for sure!).
Enjoy this with company….or else you will eat it all up. Not that that’s a bad thing – but this does go down very well with company (this is a dessert that is rude not to share…wink!).
1 cup macadamia nuts (raw or baked)
1/4 cup rice malt syrup
1/4 cup coconut oil
2 tablespoons cashew/ almond butter
1 1/2 cup cashews, soaked for 8 hours
2/3 cup almond or coconut milk
1/2 cup melted cacao butter or coconut oil
1/2 cup cacao powder
1/2 cup rice malt syrup
2 tablespoons coconut sugar
Pinch of fine sea salt
Add the macadamias into a food processor and pulse until finely chopped. Add the rest of the ingredients and blitz until the mixture sticks together when pressed in between your fingers. If it doesn’t add more coconut oil or cashew butter. Press into a lined spring form cake tin (I used a 9″ one). Press down firmly and smooth the base out. Place in the freezer to set.
Place all of the mousse ingredients into a blender and blend until smooth, silky and glossy (you may need to scrape the sides down a few times). Pour over the top of the base. Place in the fridge to set over night.
Remove from the tin and slice into thin wedges. Serves around 16 people. Too easy!
** Note: This mousse would be incredible with some raspberries mixed through once the mousse has been blended into utter smooth, silky-ness. I topped mine with some sour cherries to cut through the sweetness, but fresh raspberries or a mixed berry compote would be amazing too.
