These are possibly one of my favourite treats to give to people who can’t see how chocolate can be made into a clean and healthy treat. Why? Because they are just so deliciously decadent, chocolatey and delicious…and good for you.
Here are some other reasons why these chocolate truffles are amazing:
+ Children will LOVE them. In fact I guarantee they will never know these are good for them!
+ They are incredibly quick and easy to prepare, requiring only one bowl to wash up
+ You can get creative with this recipe. Roll them into balls, press them into shaped ice cube trays (lego moulds are currently my favourite for children!)
+ These would make an incredibly tasty slice, pressed into a tin lined with baking paper. Feeling extra decadent? Drizzle with my chocolate drizzle. See here for a recipe.
1 cup walnuts or pecans
1 cup of medjool dates, pitted
2 tablespoons of melted coconut oil
2 tablespoons coconut milk or cream
1 tablespoon cacao powder
1 tablespoon chia seeds
1 tablespoon desiccated coconut
1 teaspoon cinnamon
1 teaspoon maca powder (optional)
Extra cacao powder, for rolling
Combine the nuts into a food processor and blitz until roughly chopped. Add the dates and pulse until combined. Add all of the other ingredients and pulse until the mixture sticks together when pressed between your fingers. If needed add more coconut oil or coconut milk. Roll a tablespoon of mixture into a ball and roll in extra cacao powder. Refrigerate. These will also keep well for a month in the freezer (if they last that long!).
