These banana pancakes are so so easy, quick and utterly delicious. They are perfect for a weekend breakfast or brunch when you want something tasty in a flash (because you have the weekend to enjoy- sun, surf, movin’ that body of yours!).
I enjoy these with a few slices of chopped up banana and blueberries- although they would be delicious with:
// Maple syrup/ rice malt syrup and banana slices
// Caramel sauce and raspberries
// Strawberry ‘jam’ with toasted coconut flakes

There was a time (sadly) when I thought that wholegrain oats were the devil. Fat inducing devil type food. Even though I knew they satiated me perfectly, that must mean that they were fattening.

This recipe had to be cleaned up. It’s such a favourite amongst school lunch boxes, office ‘bring a plate’ occasions and an afternoon tea. I’m yet to meet someone who doesn’t enjoy a piece of banana bread!
This recipe is nut free- so it is perfect for school lunch boxes and for a treat at kids parties or any other occasion. It’s relatively low in sugar but there is a little coconut sugar to sweeten the bread, so this should be seen as an occasional snack or treat.
You could always replace the coconut sugar with rice malt syrup (equal amounts). If you do this make sure you use really ripe bananas to add a little more sweetness to the bread. I have already kept the coconut sugar as low as I could to still make the bread deliciously sweet.
I hope you love this as much as my partner and I do. It works so well as an easy Sunday brunch as well as it does a sweet treat.
These muffins are incredibly delicious. So so delicious and you will prepare them in around 5 minutes. A very fast and simple chocolate fix. These would be perfect with some of your favourite chocolate crushed and stirred through the batter, or with some raspberries added. I’m thinking of making another batch with a few spoonfuls of date caramel added in the middle (imagine that- chocolate caramel muffins that are healthy!).
To make these lunch box safe just simply replace the almond meal with extra buckwheat flour. You can omit the nut butter from the chocolate glaze too. Rice malt syrup can replace the coconut sugar for anyone concerned about fructose, but just keep in mind that they wont be nearly as sweet.
These muffins are a great way to encourage children to enjoy healthy, chocolately food without being sugar ladden!

This slice is luscious! Completely and deliciously luscious! I made it on the spur of the moment when I was craving something with caramel, yet I didn’t have a ton of dates to use. The dates give this a very subtle caramel taste which is oh- so- delicious.
This slice lasts in the freezer for a good month and in fact the caramel just gets better and better. I doubt it will last that long though! Cut it into small pieces and enjoy a little piece here and there. I hope you enjoy this as much as I do!…
Recently, I’ve started to focus on giving you some deliciously simple, healthy and speedy dinner (and left over lunch) ideas! While I love my sweet (healthy) stuff, I’ve heard your call for savoury options.
This recipe is another one of my favourites (along with my coconut, pumpkin and split pea curry). It is super super quick and absolutely delicious. Many of the ingredients might even be lurking in your cupboard so you don’t need anything fresh.
It is also a great family meal because it packs a good plant based protein punch (especially great if your children are going through a ‘no meat’ phase) and husbands can simply add in some cooked meat like chorizo if they want….
